Food safety is critical to food manufacturers. The smallest error can have disastrous consequences - impacting brand reputation and ultimately your profitability. Food safety is too important to leave to chance. You need to know exactly where problems may occur before they actually do. When a food safety issue is identified it may already be too late.
With 40% of product recalls attributed to microbiological contamination in 2015*, it is clear that a focus on hygiene is critical to protecting your product from sources of cross-contamination.

Red meat and meat products have been implicated in many cases of foodborne illness, with an increase in reported cases over the last 10 years and red meat products representing 5% of food product recalls in 2015. The impact on humans, and the subsequent impact on healthcare services, the retail industry and processors is significant.
Pathogenic microorganisms, including salmonella, listeria and campylobacter are found in the digestive tract of healthy cattle and sheep animals. These microorganisms are excreted in the feces and can be found on the hides and fleeces of the live animal. Bacteria contamination of the fleece/hide can then be transferred onto previously sterile meat surfaces during the slaughter process.
Hygiene of the entire process from the farm to packaging is critical in controlling cross-contamination.

There are several species of campylobacter, but one in particular, Campylobacter jejuni, is a human pathogen and tops the league table as the greatest cause of food poisoning in Europe.
Around 214,000 cases of campylobacterosis were reported in 2014, with unreported cases approximated at 9 million, costing the European Union an estimated €2.4bn through healthcare costs and lost productivity. Campylobacterosis can, however, be fatal, with a staggering 100 deaths a year connected with the organism.

Listeria monocytogenes can be considered a ubiquitous organism: widespread in nature, the environment and in living organisms. The organism has saprophytic ability, deriving nourishment from dead or decaying organic matter, and especially once protected by biofilm demonstrates extreme resistance to dehydration, physical agents and environmental conditions.
Faced with a spread of microorganisms so pervasive both in the environment and within our food chain, the incidence of the disease is demonstrated between 2 and 11 cases per million population per year (depending on the country) with a mortality rate much higher than other pathogens.
